Breakfast on the go 😊

I was advised recently that I need to up my calorie intake if I want to see the results I’m looking for at gym. I’m really bad at having breakfast, and usually just gulp down a cup of coffee at work.That gives me the energy and enlarged squirrel eyes I need to get through my morning emails.

Last week I bought a pack of 5 vegan breakfast bars from my local supermarket. At R30 a pack they’re reasonably priced and quite nice. But this sparked an interest to make my own, using more ingredients to make them a little more substantial.

I have a bad habit of buying bananas with the promise in mind of eating them and then I never do, and they start to brown and I usually end up baking something banana-y.

So today, I made vegan, sugar free superfood banana-granola-raisin-nut-seed breakfast bars! WIN!

In a small bowl mix together:

1/4 cup soy/almond/rice milk
1/2 cup Maguey sugar substitute (I made one batch with 1/2 cup agave liquid)
1 tbsp chia seeds
1 tbsp flax seeds
1/4 coconut or olive oil

Then add in 3 ripe mashed bananas, a handful of dried fruit of your choice, crushed nuts, and raisins.

In a medium sized bowl mix together:

1 and a half cups granola
1/4 cup brown flour
Half a tsp of baking soda, cinnamon, salt, cardamom powder (thank you mommy for the providing this from your stocks)

Optional: 1 tbsp maple syrup.

Mix the dry ingredients into the wet ones.
Grease an oven friendly square baking dish.
Ladle the mixture into the dish and bake at 350 for about 35 minutes until crispy.

Allow to cool before cutting into your desired serving size and wrap individually for a healthy breakfast on the go.

Please note that what I have made is double the recipe I have you above. Because I don’t have a smaller baking dish 😜

Feel free to substitute raisins with cranberries and crushed nuts with almonds, or cashews. But please let me know if you’ve given it a try and how it turned out 😊
